Cranberry Relish

 

1- 12 oz. package cranberries
1- 8oz can shredded pineapple in juice
1- cup packed brown sugar
1/4 cup golden seedless raisins
1 TBLS local honey
1 tsp salt


1 drop Twilight Cinnamon Oil or 2 tsp Cinnamon Spice
1 dropTwilight Essential Oil of or  1 tsp Ginger spice or freshly grated ginger

In 5qrt dutch oven or saucepan over med/high heat add the cranberries and pineapple.

Heat until the cranberries begin to burst.

Add the rest of the ingredients except the essential oils. If you are using ginger and cinnamon spices add them now.( If you are using essential oils add for last 15 minutes.)

Bring to boil reduce to heat to a simmer.

Add the essential oils, ginger & cinnamon now if you are using them.

 Simmer for about 15 minutes or until mixture begins to thicken. Makes about 3 cups Approximately 120 Calories per 1/4 cup

If you would like to make this sweeter ( and add a few calories) you can add sugar to the mixture.

 

NOTES:

This is the basic recipe for you to start with. Over the decades I have occasionally altered it. Sometimes I ad more sugars  (some years my craving for sweets kicks in). I have tried different kinds of sugar like coconut sugar, turbinado cane sugar, confectioners sugar in addition to the brown sugar... I added shredded coconut, that didn't go over to well. I do like adding walnuts though...
